(Recipe
makes about ten medium sized potato pancakes.)
2 med/lg
sweet potatoes
4 or 5 med to large egg whites
2 tsp. minced garlic
sprinkle sea salt
sprinkle black pepper
whole wheat flour to bind
Wash and
grate sweet potatoes. Add egg-whites. Mix thoroughly. Add
garlic, salt and pepper. Mix thoroughly
again.
Sprinkle
the whole wheat flour slowly as you stir the mixture, using
enough to make the mix into a moderately-stiff consistency.
Heat
Olive Oil and spoon potato mixture into hot skillet in small
pancake sized amounts. Fry until golden to medium
brown.
Serve hot
or cold with a good assortment of raw vegetables and fat free dip or fat free sour cream.
